Sweet Mash + Kansas City BBQ

From the Master Distiller: With a backbone of rich molasses and tomato, this thick sauce makes an awesome glaze to Kansas City’s signature style of BBQ.  On a recent trip selling our Sweet Mash whiskeys in Kansas City, I stopped by Scott’s Kitchen at Hangar 29, a small but mighty BBQ joint right by the airport.  The Brisket Burnt Ends, house made smoked sausage and Pork Ribs were perfection.  Washing everything down with our refreshing version of a Bourbon Highball called The Tickle would be the perfect compliment.

 

Savory Bites: Brisket burnt ends, pulled pork, chicken thighs, ribs, or wings, served with cheesy corn, baked beans, coleslaw, mac and cheese, and potato salad.

Sweet Mash + Eastern NC Vinegar Sauce

From the Master Distiller: My first experience eating at a BBQ restaurant in North Carolina opened my eyes to a whole new style of eating pulled pork, whole hog!  Growing up in Southern Indiana, I was accustomed to a thicker, sweeter sauce on my pulled pork sandwiches.  The classic Eastern NC style of BBQ calls for whole hog, pit BBQ with a mop sauce that is thin, vinegary, peppery and savory.  The way this sauce cuts through the rich, decadent slow smoked pork is really unmatched.  I can’t think of a better drink than a Hard Truth Gold Rush to sip with this style of BBQ.  This honey sweet, easy drinking bourbon cocktail is perfect for someone new to whiskey, but still hits all the right notes for the hardcore whiskey lover.

 

Savory Bites: Go whole hog if you can, pulled pork, and anything from the smoker, served with coleslaw, hushpuppies, and corn bread.

Sweet Mash + Memphis Style BBQ

From the Master Distiller: Memphis really has two very different styles of finishing BBQ.  One is all about the sauce — bold, tangy, thick and smokey.  The other utilizes a finishing of a generous coating of a complex, sweet, savory and spicy dry rub.  The good news is that the pitmasters know what they’re doing with the perfectly smoked meats in Memphis, so either way of finishing works just fine.  Typically when I’m eating BBQ in Memphis its hot, and humid and well, its hot.  The Sweet Mash Smash is the perfect refresher to cool you down and enjoy this Memphis BBQ moment with friends.

Sweet Mash + St. Louis Style BBQ

From the Master Distiller: The St. Louis style of BBQ to me is an intersection of many styles from around the country, yet singularly unique. It’s probably the closest in style to what I was raised on in Southern Indiana. This sweet, tangy, tomato and molasses-based sauce is used to finish the perfectly pit smoked pork ribs and my favorite, pork steaks. To me, this rich and sweet flavor profile begs for a drink that brings a unique, bitter complexity.  Our take on a Boulevardier fits the bill perfectly. The bold spice from our Sweet Mash Rye, bitter notes of Campari and sweetness from the Vermouth is made complete with an orange rind expression.

 

Savory Bites: Pork steaks, brisket and burnt ends, pork ribs and rib tips, slow-grilled and crispy, with a slice of white bread on the side, potato salad, and baked beans.

Refreshing Sips: The Boulevardier is a rich and refreshing cousin to the negroni, made with cask strength Sweet Mash Rye, Campari, sweet vermouth, and a twist of orange.

Sweet Mash + Lexington Dip

From the Master Distiller: This Western North Carolina Style of BBQ sauce shares a considerable amount of DNA from their neighbors to the east, though adds in a bit of sweetness, body and richness from the addition of some tomato and sugar.  My dad had a buddy who made his own version of this sauce and the BBQ the two of them made always stood out in a crowd.  Pork butts and whole chickens on the pit rules here.  Smokey, vinegary and tangy, this BBQ is close to my heart.  For my palate, this BBQ style is a great example of complexity and balance, which is why I would be sipping on our Signature Old Fashioned.

Sweet Mash + South Carolina Gold

From the Master Distiller: South Carolina has a tremendous food scene.  A highlight for me is the unique and delicious Carolina Gold BBQ sauce, especially with Chicken.  Mustard is the key differentiator in this style and when you have it done right, you might not want BBQ Chicken dressed any other way.  Tangy, sweet, spicy and smokey, this BBQ begs for our signature Smoked Cherry Sazerac.

Sweet Mash + Alabama White Sauce

From the Master Distiller: Alabama has many styles of BBQ, though the use of a very unique white BBQ sauce sets them apart from the crowd.  This sauce is comprised of vinegar, salt, sugar, black pepper and mayonnaise giving it a white creamy appearance and a tangy, spicy kick.  It is used as a marinade, finishing and dipping sauce for perfectly smoked chicken.  Our signature Red Hook cocktail utilizing our High Road Rye cuts through the acidity and richness of this style of BBQ in the best compliment.

 

Savory Bites: Smoked or grilled whole chicken quarters and pulled pork, serve with fries, coleslaw made with white sauce, black-eyed peas, and grilled green beans and asparagus

Sweet Mash + Texas BBQ

From the Master Distiller: Ok, I’ve got to be careful here. I’m not going to deliver my thoughts on Texas BBQ as someone who can expertly identify what makes each micro region of this country-sized state uniquely different.  All I can say is this… I have been so sick and tired of my Texas friends over the years telling me how much better Texas BBQ is than any other place in the US.  Then I began traveling to Texas for work… good God.  Texas has perfected the art of Beef BBQ.  If you have never had a perfectly cooked Texas style beef rib or slice of beef brisket cooked on an off-set stick smoker, book a flight to Central Texas immediately.  You will be forever changed by beef, salt, pepper and oak.  It reminds me of what separates good from great whiskey makers.  Partnering with farmers to start with the best, simple ingredients, then executing a technique driven by art and science ALWAYS yields the best tasting results.  Oh yeah, they sometimes have great sauces on the tables, but that is not what defines Texas BBQ, so I’ll just stick with the beautiful bark of caramelized beef fat, salt and a thick layer of course ground black pepper.  When I’m making my best attempts at re-creating this BBQ style in my backyard here in Southern Indiana, I’m sipping on our signature “Palma“.  This margarita style cocktail which subs out Rye for tequila plays perfectly against the rich, smokey beef found in the great state of Texas.

 

Savory Bites: Slow cooked beef brisket, beef and pork ribs, or spicy sausage, garnished with pickles and onions and served with pinto beans, potato salad, vinegar slaw, baked beans, mac and cheese.

Refreshing Sips: The Palma is our take on a whiskey-paloma, made with High Road Rye, fresh lime juice, and agave syrup, this one is light and refreshing, for sun-soaked sipping.
